Lemon Blueberry Biscuits

Ingredients

2 cups all-purpose flour
1/3 cup granulated sugar
2 teaspoons baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
8 ounces lemon yogurt
1 egg, lightly beaten
1/4 cup butter or margarine, melted
1 teaspoon grated lemon peel
1 cup fresh or frozen blueberries

Glaze:

1/2 cup confectioners' sugar
1 tablespoon lemon juice
1/2 teaspoon grated lemon peel

Instructions:

Preheat your oven to 400°F.

In a large bowl, combine the flour, granulated sugar, baking powder, baking soda, and salt.

In another bowl, mix together the yogurt, egg, melted butter, and lemon peel. Stir this mixture into the dry ingredients just until moistened. Fold in the blueberries.

Drop the batter by tablespoonfuls onto a greased baking sheet.

Bake for 15-18 minutes or until lightly browned.

Combine the glaze ingredients and drizzle over the warm biscuits.

Yield: 1 dozen
